The key to manipulating your ailments with attacks is damage types on the weapon and damage type to attacks on accessories.
For spells it is damage type to spells on weapon/catalyst and accessories.
For both attacks and spells, runes and passive tree are also important in the form of Toxic Emanations and Sacred Oath.
Being able to have the right type of damage in your accessories is more important than having 2-3 flat damage rolls.

If you are manipulating your ailments to get 7 Offerings, my choice for damage on armor is % Damage as it will apply to all of our damage types including all 4 ailments that deal DoT.
